Vegan Sweet Potato Dinner Rolls

Serves: 16 rolls
Vegan!
Ingredients
3 to 3 1/2 cups
Whole wheat flour
2 packages
Quick rising yeast
1 teaspoon
Sea salt
1 cup
Mashed sweet potato
1/2 cup
Unsweetened applesauce
1/2 cup
Unsweetened plant milk
2 tablespoons
Cane sugar
Step by Step Instructions
- Stir 2 cups of flour, the yeast, and the salt together in a large bowl.
- Heat and mix the mashed potato, applesauce, milk, and sugar in a saucepan. Add the mixture to the bowl of flour.
- eat with a mixer on low 30 seconds, scraping the sides of the bowl constantly. Beat on high 3 minutes and stir in the remaining flour.
- Put the dough onto a lightly floured surface and knead until soft, smooth, and stretchy. (This should take about 5 to 7 minutes). Cover and let rest 10 minutes.
- Line a large baking sheet with parchment paper, then divide dough into 16 portions. Roll each portion into a ball and place them 1 inch apart on the prepared baking sheet. If desired, cut small designs onto the top of each one.
- Cover the rolls, put them somewhere warm, and let them rest for 45 minutes. Preheat oven to 400, then bake the rolls for 20 to 25 minutes, then serve warm.
