Creamy Mashed Broccoli

Vegetarian!

Ingredients
2 bunches Broccoli (roughly chopped)
1 cup Heavy cream
2 cloves Garlic (finely chopped)
Salt & Pepper to taste
1/8 teaspoon Nutmeg
1/2 cup Parmesan cheese (grated)
Juice from 1/2 of a lemon
Try adding or substituting additional types of grated cheese
Salt for the water
1/8 teaspoon Kosher salt

Step by Step Instructions
  1. Put the broccoli stalks into a pot of salted water, boil for 5 minutes, then strain and put into a bowl of ice water. Once cooled, roughly chop.
  2. Add the cream, garlic, kosher salt, and nutmeg to a medium sized saucepan, then bring to a boil and reduce to a simmer. Cook until the sauce reduces by 1/3rd
  3. Add the chopped broccoli to the saucepan and stir it until warm and well mixed. Remove from the heat and mash.
  4. Add the Parmesan (and/or other cheeses) and lemon juice, stir together well, then season to taste with salt and pepper.
