Stovetop Broccoli Casserole

Ingredients
13 cups
Fresh broccoli florets
1/4 cup
Water
5 tablespoons
Unsalted butter (divided)
1 cup
Crushed ritz crackers
2 tablespoons
Chopped fresh parsley
1 cup
Chopped onion
3 cloves
Garlic (finely chopped)
1/4 cup
Flour
1 1/2 cup
Whole milk
2 teaspoons
Mustard
1 teaspoon
Salt
1 teaspoon
Pepper
3 cups
Shredded cheddar cheese (divided)
1/2 cup
Mayonnaise
Step by Step Instructions
- Place broccoli and water in a large microwavable bowl. Cover it loosely with plastic wrap, and poke holes in plastic wrap to vent. Microwave on high for 8 minutes, then uncover and set the bowl aside.
- Melt 1 tablespoon of butter in a Dutch oven or cast iron skillet over medium heat, then stir in the crackers and cook stirring for 2 minutes. Remove from heat, stir in the parsley, then transfer the mixture to a bowl and clean out the skillet.
- Add the remaining butter to the cleaned skillet and melt it over medium high heat. Add the onion and coo for 5 minutes, then add the garlic and cook for 1 minute. Gradually whisk in the milk, and bring the mixture to a simmer.
- Simmer whisking constantly for 2 minutes, then reduce the heat to medium-low and add the mustard, salt, pepper, and 2 cups of the cheese.
- Cook stirring constantly for 2 minutes, then stir in the mayonnaise. Fold in the broccoli florets and cook stirring occasionally for 12 to 15 minutes.
- Sprinkle the top with the remaining cheese, remove the skillet from the heat, cover, and let stand for 10 minutes. Uncover and sprinkle with the cracker & parsley mixture.
