Stovetop Broccoli Casserole

Ingredients
13 cups Fresh broccoli florets
1/4 cup Water
5 tablespoons Unsalted butter (divided)
1 cup Crushed ritz crackers
2 tablespoons Chopped fresh parsley
1 cup Chopped onion
3 cloves Garlic (finely chopped)
1/4 cup Flour
1 1/2 cup Whole milk
2 teaspoons Mustard
1 teaspoon Salt
1 teaspoon Pepper
3 cups Shredded cheddar cheese (divided)
1/2 cup Mayonnaise

Step by Step Instructions
  1. Place broccoli and water in a large microwavable bowl. Cover it loosely with plastic wrap, and poke holes in plastic wrap to vent. Microwave on high for 8 minutes, then uncover and set the bowl aside.
  2. Melt 1 tablespoon of butter in a Dutch oven or cast iron skillet over medium heat, then stir in the crackers and cook stirring for 2 minutes. Remove from heat, stir in the parsley, then transfer the mixture to a bowl and clean out the skillet.
  3. Add the remaining butter to the cleaned skillet and melt it over medium high heat. Add the onion and coo for 5 minutes, then add the garlic and cook for 1 minute. Gradually whisk in the milk, and bring the mixture to a simmer.
  4. Simmer whisking constantly for 2 minutes, then reduce the heat to medium-low and add the mustard, salt, pepper, and 2 cups of the cheese.
  5. Cook stirring constantly for 2 minutes, then stir in the mayonnaise. Fold in the broccoli florets and cook stirring occasionally for 12 to 15 minutes.
  6. Sprinkle the top with the remaining cheese, remove the skillet from the heat, cover, and let stand for 10 minutes. Uncover and sprinkle with the cracker & parsley mixture.
