Ingredients
6 tablespoons
Butter (softened, divided)
8 slices
Bread (original recipe suggests sourdough)
1/2 cup
Shredded sharp white cheddar cheese
1/2 cup
Shredded Monterey Jack cheese
1/2 cup
Shredded Gruyere cheese
3 tablespoons
Finely shredded Manchego cheese
OR finely shredded Parmesan cheese
3 tablespoons
Mayonnaise
4 ounces
Brie cheese (sliced, rind removed)
1 cup
Blackberries
1/8 teaspoon
Onion powder
Step by Step Instructions
- Spread butter over one side of the bread slices, then toast the slices butter side down in a skillet over medium-low heat for 2 to 3 minutes.
- Mix the cheddar, Monterey Jack and Gruyere cheese together in a bowl. In a separate bowl, mix the Manchego cheese, mayonnaise, 3 tablespoons of butter, and the onion powder together.
- With the toasted side up, layer four slices of bread with Brie cheese, the cheddar mixture, and blackberries. Top with the other slices of bread toasted side down.
- Spread the outside of the sandwiches with the mayonnaise mixture. Toast sandwiches over medium heat for 5 to 6 minutes on each side, then serve immediately.
